Passion Fruit Tartlets
Yields 12
Ingredients (Tart Shells)
1 Cup Butter Room Temperature
1/2 Cup Powdered Sugar
3/4 Teaspoon Salt
1/2 Teaspoon Vanilla Extract
2 Cups All Purpose Flour
Ingredients (Fruit Curd)
7 Large Egg Yolks
6 Passion Fruit
1 Cup Sugar
Pinch Salt
1 Stick KRATOMade™ Passion Fruit Drink Mix
10 Tablespoons Cold Unsalted Butter (cut into chunks)
Ingredients (Tart Shells)
1 Cup Butter Room Temperature
1/2 Cup Powdered Sugar
3/4 Teaspoon Salt
1/2 Teaspoon Vanilla Extract
2 Cups All Purpose Flour
Ingredients (Fruit Curd)
7 Large Egg Yolks
6 Passion Fruit
1 Cup Sugar
Pinch Salt
1 Stick KRATOMade™ Passion Fruit Drink Mix
10 Tablespoons Cold Unsalted Butter (cut into chunks)
CURD FILLING
- Slice each passion fruit in half and scoop pulp into blender. On low speed, pulse the blender to separate seeds from the membrane, but not enough to puree the seeds. Rest fine mesh sieve over a small bowl, and pour passion fruit into sieve. Use back of spoon to press out the juice. Stir and press several times, until only pulp and seeds are in the sieve. Discard these, and you should have about 1/2 Cup of Passion Fruit juice.
- In small saucepan combine the egg yolks, passion fruit juice, and sugar. Stir constantly over medium heat until sugar dissolves and sauce thickens enough to coat the back of the spoon.
- Remove from heat. Add salt and butter one chunk at a time, stirring after each addition until butter has melted.
- Place fine mesh strainer over a small bowl and pour curd into the strainer. Stir the curd, pushing gently through the strainer (you’re removing any egg solids from the curd by straining a second time). We’re looking for silky smooth texture. Transfer curd into serving bowl and press piece of plastic wrap to the top of the curd to avoid a skin. Refrigerate until chilled.
TART SHELLS
- Preheat oven to 325 degrees. Spray a mini muffin tin with vegetable spray and set aside.
- In a small bowl, mix together the flour and salt. Set aside.
- Add butter to a large mixing bowl and beat on medium speed with electric mixer to a creamy consistency. Add powdered sugar and beat 1-2 minutes until pale yellow and fluffy. Mix in vanilla extract.
- Add flour to the butter mixture and beat on low speed until incorporated, scraping down sides of bowl if necessary.
- Scoop 1 level tablespoon of dough into each muffin tin. Use floured dough tamper, to tamp the dough into the muffin tins to form little shells. Refrigerate for 10-15 minutes until chilled.
- Bake for 10 minutes then remove from oven and use dough tamper again to press the puffed dough down into shells.
- Bake another 5-8 minutes until golden brown. Allow the shortbread shells to cool in the pan. Carefully slide very thin knife between the tart and the pan to remove shortbread crusts.
*** Shortbread is naturally crumbly, so don’t worry if a little cookie falls away.
- Cool to room temp on wire rack. When shells are at room temperature, pipe/spoon curd into the shortbread shells. Top with a piece of kiwi, or other fruit and mint leaf for garnish. Cover loosely with plastic wrap until ready to serve. Best if served the same day.
